After the success of Mauro Improta’s recipe I shared on this blog some time ago, today I’m going to show you a dish of another star of the TV show "La Prova del Cuoco", Cristian Bertol.
I met Cristian at ORSOGRIGIO Suite and Gourmet Villa in Ronzone (Trento), a five star hotel he manages with his twin Renzo and to which the Michelin-starred ORSOGRIGIO restaurant is attached.
I had a great time there.
Cristian is exactly as he appears on TV: jovial, friendly, always smiling and ready to joke. And I didn’t miss an opportunity to get a recipe to share with Party Vista Mare readers.
It is a dish based on char, a fish similar to trout and, according to some people, much tastier.
The ingredients needed for 4 people are:
4 fillets of arctic char
25 cl of water
50 cl of apple vinegar
25 cl of wine (the chef recommends Trentodoc brut)
1 carrot
1 stick of celery
1 white onion
5 cl of extra virgin olive oil
2 spoons of sugar
salt
to taste
In a saucepan bring to the boil the water with 25 cl of apple vinegar, the wine and a bit of salt. Add the julienne-cut vegetables and cook for about 15 minutes.
After dividing each fillet of char in four small chunks, lay them in a pan with a drizzle of oil and a pinch of salt, pour over the juice of vegetables, being careful to completely cover them. Lay some baking paper on top and bring to the boil. Then leave to cool for about an hour.
Now in a small saucepan add the sugar to the remaining 25 cl of apple vinegar and reduce to obtain a thick sauce, and leave to cool down.
Arrange on a plate, lay down the char fillet with the vegetables well drained of their cooking liquid, add some leaves of green salad and dress with a trickle of extra virgin olive oil.
The final touch, decorate with a few drops of apple vinegar reduction beside the char.
