I had a craving for spaghetti with clams. Then I went shopping, I saw some turnip greens and I fancied pasta with them as well. What was I to do? I tried cooking the two ingredients together and I must say that the experiment succeeded because I really liked the result. I’ll give you the recipe, and if you feel like trying it, let me know what you think!The ingredients for two people are:
200 g of spaghetti
500 g of clams
100 g of turnip greens
parsley, salt, chilli pepper, extra virgin olive oil to taste
I put the clams in a pan and I simmered them with a lid for a few minutes until they opened. I took off the shells from half of the clams, I kept the rest and, in the meantime, I blanched the turnip greens for a few seconds. In a large pan I heated the oil with the garlic and chili, then I cut the salted turnip greens into small pieces and I stir-fried them. Finally I added the clams.
I cooked the spaghetti ‘al dente’ and I finished off the dish by cooking everything together in the pan.
I dressed the dish with a handful of parsley and a drizzle of olive oil.
